*** Important note about handling raw meats***
All the meats you have received may be put into smaller portion bags and refrozen if you like.  They can also be cooked within a couple of days and used as is.  There may be raw boneless chicken, chicken wings, ground hamburger and ground pork in your bag.  Handle them separately and be aware that the bags may have juice from the raw product on them…do not let children handle the bags or product, and wash your hands thoroughly after handling them…just like you would with any raw meat product from the store.  There should also be raw bacon in your bag.

Some of our Favorite Recipes

Arrozo Rojo (Mexican Rice)

In a large saucepan, over medium heat, add 3 tbs vegetable oil and 1 cup of uncooked rice. While it begins to cook, add 1 tsp salt and 1/2 tsp cumin, stir in 1/4 cup chopped onions. Stir it constantly until it becomes puffed and golden.  Stir in 1/2 cup tomato sauce and 2 cups Chicken broth or stock.  Cover, reduce to a simmer and cook until all water is absorbed … probably 20-25 minutes.  If you like, add heated black or chile beans on top!

IKEA’s Secret Swedish Meatballs

For the Meatballs:  Combine 2 of the hamburgers we gave you, the bag of ground pork, 1 small diced onion, 1Tbs chopped garlic, 1/2 cup bread crumbs, 1 egg, 1/3 cup milk, 1tsp salt 1/2 tsp ground pepper.  Mix and form into 2 inch balls. Add 1 TBS veggie oil to a large skillet and cook on medium heat (turn often) until done.  Turn the oven on to 400 degrees.

For the Sauce:  while cooking the meatballs, in a medium saucepan over medium heat, melt 5 TBS butter, when melted, slowly add 1/3 cup flour, and whisk until a roux forms. slowly add 1 1/4 cups of beef broth/stock.  When combined add, 3/4 cup heavy cream, 2tsp soy sauce and 1 tsp Dijon mustard.

Finish:  In an oven safe dish, place the meatballs and pan drippings, then pour the sauce over them.  Bake in the preheated oven for 30 minutes.  Serve with mashed potatoes or French Fries.

Baked Ziti

In a large pot, boil 1 gallon water and 1/4 cup salt and bring to a boil.  Reduce to a simmer and add 1 lb. of ziti or penne pasta.  Cook until al dente and strain in a colander. While the Pasta is cooking, in a large skillet, add 1 tsp veggie oil and cook 1 lb. of ground beef, pork or Italian sausage until brown, and drain in a colander.  Return the skillet to the stove and add 1 small diced onion and 1 TBS diced garlic, cook until translucent. Now stir in one jar of your favorite spaghetti sauce…season it with your favorite Italian seasonings (basil, rosemary, thyme, oregano), salt and pepper.  Preheat oven to 350. In a large bowl, combine all of the pasta, 1/2 of the meat sauce mixture and 1/2 cup ricotta cheese.  Mix well.  Spray a 13″ X 9″ baking dish with Pam and add the pasta mixture.  Pour the remaining meat sauce over the pasta, add 1/2 cup ricotta in small dots, over the sauce. Top with 16 oz shredded mozzarella and 1/2 cup grated Parmesan.  Bake for 20 minutes, until brown on top.  Mangia!  Enjoy with some garlic toast and a nice Chianti!!!

Chicken Spiedies

This is an Upstate New York Recipe made famous by Greg Lore!

Cube 2 lbs. boneless chicken breast and add to a gallon Ziploc bag or Tupperware container. Add 1 cup olive oil, 1/2 cup white vinegar, 1 TBS lemon juice, 1 tsp salt, 1 tbs chopped garlic, 2 tsp oregano, 3 TBS dried mint, 1 TBS basil, and 1/2 tsp pepper.  Seal the container and shake well.  Refrigerate this for 1-3 days and shake every 8 hours or so.  Take the cubes out and skewer them on wooden or metal skewers, leaving a small space in between each of them.  Cook on an outdoor grill at a medium temp…be sure not to overcook. These can be served on a hotdog bun.  Would be great with grilled skewers of tomatoes, onions, peppers and squash, or would go great on soft Italian bread and served with your favorite picnic salad (Potato, macaroni, or pasta), or watermelon. Greg says this should always be served with a Genesee Cream Ale (Genny Screamers to those in the know)!!!  BTW, Nick Savino approves of this whole heartedly…

Home Made Taco Seasoning

You already have some of the ingredients for taco’s, so if you don’t have a packet of Ortega seasoning hanging out, here’s an easy recipe:

1 TBS chile powder, 1/2 TBS Cumin, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp red pepper flakes, 1/2 tsp Oregano, 1/2 tsp salt, 1 tsp pepper, pinch cayenne pepper. Mix together and mix in with ground hamburger and/or pork.     Don’t forget your Corona with a lime!!

Classic Meatloaf

Every Mom had a different recipe, but this is a great base and you can always doctor it up the way Mom did…

In a large mixing bowl, mix:  1# ground beef, 1 cup dried breadcrumbs, 1 small diced onion, 1/2 cup milk, 1 egg, 2 tsp ketchup, 1TBS Worcestershire sauce, 1 tsp salt, 1/2 tsp garlic powder, 1/4 tsp black pepper.  Mix with your hands and form into a loaf.  Place into a greased loaf pan and use your hands to make sure it is spread out evenly.

For the topping:  In a small bowl mix: 1/4 cup ketchup, 2 TBS brown sugar and 1 TBS vinegar. Mix together and spread evenly over the ground mixture.  Cook, uncovered, in a 350 degree oven for about an hour.  Let stand for 10 minutes before cutting.

Adult Watermelon

Take one small watermelon and carefully cut a 1″ hole in it.  Make the hole as deep as you can…all the way to the middle.  Put a funnel in the hole and slowly add 6-8oz of your favorite vodka, rum or gin.  Refrigerate for 1 day before enjoying.  Remember … watermelon can be left at room temp until it’s cut, then it must be refrigerated.

Family Friendly Watermelon

Cut watermelon in half, then into slices … touch of salt and you’re GTG.  Not quite the same as the adult version, but it doesn’t suck…

Watermelon Margarita

In a blender mix 2 cups of fresh watermelon and 1oz simple syrup (or agave).  Pour into a shaker tin and add 4oz tequila, the juice from 2 limes, and 1oz triple sec.  Shake with Ice, Strain over fresh ice into your favorite margarita glass which has already been rimmed with a kosher salt, chile powder rim (2TBS kosher salt, 1/2 tsp chile powder).  Garnish with a lime wheel and watermelon cube.  Yield: Two drinks … duh, who could have just one???
